“Hello Darling” Kahlua Coffee Comfort drink

Well, that name pretty much describes it.

But let me start over.

Today I could use some comfort to ease the madness I’m going through now. You see, I just found out that my other design blog which I’ve been working on so hard (like the rest of us), for a few years now, is hacked. I do not know how long but I believe it’s been hacked for a while and I do not know how much damage has been done.

Maybe it’s my fault that I haven’t written on that blog for a couple of months since life became so demanding and I did not have a chance to change password or give the website a routine checkup. So yes, I could use some comfort here because just the thought of damaged files…what a headache.

As my eyes scrolled down the strange-looking page of what is supposed to look like my design blog , I immediately thought about my other blog, this one, and rushed to log in making sure everything is o.k. and everything here is o.k. thank god.
So I took a deep long breath even though deep inside my heart swirled in one big storm.

We can all use a bit of comfort when we get distracted by something so unexpected and because it happened during the day and I was home alone, I walked away from my computer to put some thoughts together but also felt the need to make something. To create. I ran down stairs and spontaneously made this creamy delicious winter drink. It made me feel better, way better. It was a combination of a lot of things: the delicious taste of freshly brewed coffee, the soft texture of the cream, the process of making something, and the insane aroma that followed. Sip by sip I had to sit, enjoy the drink and slow down. Really slow down – Hello Darling – what a treat.

Regardless of our mental being at certain moments in our lives this delicious hot Kahlua coffee is so grown up you’d want to have it any time of the day especially you, night owls out there.  And it’s perfect for cold winter days our country is suffering from as I write this post. But again, here in South Florida, it’s always beautiful and never freezes, which is a problem because I can’t wear my favorite fake fur coat.

I made my full cup-load of creamy Kahlua coffee drink using fresh ground whole coffee beans. If there’s one think I’m happy to own in my kitchen is this amazing cappuccino machine that basically does almost everything but walk.  More on that in another post.

This drink recipe is perfect for girls night in, Men’s night in (maybe it’s not such a good idea), or any excuse you wish to use.

Don’t wait, don’t answer the phone, don’t watch T.V., don’t Instagram –  just make “Hello Darling” and drink.

ingredients:

1 cup freshly brewed coffee
small shot of Kahlua (I used 2 tbsp for this recipe)
1 c. heavy whipping cream
1 vanilla pod, scraped
Cinnamon stick
pinch of cardamom powder

Make your own coffee with freshly ground beans. If that is not possible then any good freshly made coffee will do.

Combine the heavy cream and the scraped vanilla and whisk on low then high speed for 3 minutes, until softly whipped. Do not over-whip.

Pour the hot coffee into a pretty glass coffee mug about 2/3 full, add the shot of Kahlua. Top it off with a dollop of the freshly whipped cream. Inset the cinnamon stick and sprinkle with cardamom powder. Damn delicious.

p.s.:

If you’d like to make more then one cup simply double the amount called in the recipe.

Best easiest Oreo Mini CheeseCakes

Landed after a long tiring business trip, he drove back home from the airport. It was late. He felt smelly and exhausted.
He couldn’t wait to see his wife and daughters. He longed to be laying in his soft bed again, have his favorite food, have her arms massaging his tight neck. He longed to be treated to his favorite dessert.
Recharged by the cool shower he had a scrumtious meal, while his handsome nose sensed the strong aroma of Vanilla roaming in the air on the first floor. He looked at her and his eyes moved around the room.  He spotted something. He spotted little mini cheesecakes orderly arranged on a tray, at the far end of the room. He knew what would happened next. Those cheesecakes she made, not plenty, waited just for him. Still, they felt hot and he decided to wait. Slowly, he fell into light sleep.
But I just saw them, he later said rubbing his eyes, where did they all go?

I’m sorry but I could not stop eating these bad boys! Phew.

Is there anything better than mini cheesecakes? well yeah if I really put my mind into it but that’s another post. Think about it – mini desserts – few bites – easy on the calories and the guilt trip, right? Wrong!

Why are they so addictive you are asking? o.k. I’ll tell you: they are little cuties, fabulous, scrumptious, mouth filling, surprising and delicious…with mini chocolate chips…in mini cups…in mini-mum effort.

I’m sure there are many mini’s out there and you don’t have to take my word for it, but these are my mini perfects, a delight to eat, easy to make, requires almost no time and so cute I want to hug them. Not only that but they are much more fun when served up-side-down.

Oh, allow me to enlighten you with one tip that will make you feel naturally and legally high: shamelessly pour my chocolate ganache over a mini cheesecake. Talk to me later.

best Oreo mini cheesecakes ever

ingredients:

(making between 15-20)

1 8 oz. low-fat cream cheese, softened
1 c. low-fat plain yogurt
1/2 c. granulated sugar
1 tsp. vanilla paste
pinch of kosher salt
Oreo cookies
mini semi-sweet chocolate chips
baking cupcakes liners

Preheat oven to 375. Place one Oreo cookie in each mini baking cup. Arrange cups on a large baking sheet. Set aside.
In a mixing bowl combine cream cheese, yogurt, salt and vanilla paste. Beat until smooth. Add sugar and combine. Add one egg at a time and beat on higher speed until batter is smooth and fluffy.
Slowly pour the batter over the Oreo cookies filling up 3/4 of each baking cup. Sprinkle each baking cup with mini chocolate chip. Bake 25-35 minutes or until set and golden brown. Let cool in the cup liners then remove paper and serve these cool little mini cheesecakes on a pretty serving dish. A.Delight!

Delicious Berries Malabi Pudding

For me as a young girl growing up and spending much time outdoors with friends, it  wasn’t complete until we “stalked” the Malabi pudding stand around the corner and completely emptied the guy’s small glass refrigerator out of his delectable creamy Malabi dessert. Malabi pudding is one of the most popular dessert in the Middle East and especially in Israel. we wouldn’t let a week go by without having one. We grew up on this thing.

Almost every one in Israel knew how to make it except me because it looked complicated, yeah I sound like an infant now. But when I learned to make it I realized it’s super easy; so easy I’m laughing my head off and probably at myself.

Malabi is milky, silky and creamy and is as bright as snow-white. This dessert is all about delicacy and the taste is such a beautiful thing to experience, your juice buds will thank you. It’s like eating scented rose (no, it does not taste like perfume).

Malabi is usually served with sweet pomegranate syrup and chopped pistachio and sometimes shredded coconut, all in a glass bowl or a cup – delicious. But you know me – since I rather have lighter and more interesting version of this rich dessert, I came up with something just a bit different, in taste and presentation.

Every time when I go back to Israel – this becomes my breakfast. I’m bad I know.

Malabi is not only easy to make it looks drop dead gorgeous too.

Once you taste it you’ll find gazillion reasons why you should have it all the time.

Berry Malabi Pudding

ingredients:
6 cups of skim milk (you can use low-fat if desired)
1/2 c. white sugar
1 tbsp light brown sugar (for garnish)
1/2 c. corn flour
3 tbsp rose-water
1 c. fresh mixed berries: blueberries and raspberries

for syrup:

3 tbsp honey
1 tbsp rose-water
1 c. water

Rose-water syrup: combine water and honey in a small sauce pan and bring to a boil, reduce to medium and simmer until syrupy, about 5 minutes. Remove from heat and stir in rose-water. Let cool.

In a large bowl combine corn flour with one cup of milk, stir well until corn flour has dissolved. Heat the remaining milk and the sugar in a medium sauce pan, stirring constantly and bring to a boil. Reduce heat to low and add the corn flour mixture and rose-water. Stir until mixture is thick and smooth, about 6-7 minutes. Carefully pour Malabi mixture into pretty small bowls. Cool to room temperature. At this time drop a few berries in each bowl,  gently push berries to bottom of bowl but not touching it. Cover with plastic wrap and refrigerate at least 4 hours.  Malabi should resemble jelly consistency.
To serve: Put a plate over each bowl, place your hands on the bottom of the bowl and invert it, turn the thing over. The smooth Malabi should slide down on to the plate. The way I did was: I tilted the bowl of Malabi and carefully and patiently let it slide to the other plate. It’s easy, simply find the way that works for you.

Drizzle Malabi with rose-water syrup and sprinkle light brown sugar on top. Gor.geous!
